Ingredients:

  • 1/4 teaspoon salt and pepper

  • 1/4 cup butter

  • 1/2 cup parmesan

  • ½ lb. cooked pasta

  • 1/4 teaspoon (or less) chili flakes

  • 8 oz. fresh broccoli (or broccolini), coarsely chopped

  • 6 medium garlic cloves (chopped or minced)

  • 1 medium onion, chopped

  • 2 tbsp. olive oil

  • salt to taste

  1. Cook your pasta according to package directions, adding 2 tsp. to 1 tbsp. of salt to the water (depending on the size of your pot and amount of water.)

  2. When the pasta is done, strain it and set it aside.

  3. While the pasta cooks, wash and chop your broccolini. Thinly slice the stems, and roughly chop the florets, keeping them separate. Mince the garlic as finely as possible.

  4. In a large skillet, sauté the broccoli, mushrooms, onions and shallots in the butter and oil for about 2 minutes.

  5. Stir in the minced garlic (and uncooked shrimp, if adding) cook 2 minute more

  6. If you're going with cooked meat instead of shrimp this is the time to add it. Stir in the cooked meat and cook just until heated (optional)

  7. Season with salt and pepper as desired

  8. Stir in the pasta and mix everything well to coat. At this point everything should be hot and well coated.

  9. Sprinkle generously with parmesan cheese and stir quickly just until coated

  10. Sprinkle on more parmesan cheese to serve.
